A few kilometres inland
The reason the food here tastes of somewhere.
The farm is not on the beach
The sheep live on a mountain
They live free on the mountains behind Georgioupoli and come down a few times a week for extra feed and water. That is how it has always been done in Crete, and it is why the meat tastes of something rather than nothing.
The lamb chops on the grill come off that mountain. Seventeen euros, with potatoes and tzatziki. Most menus on this island say local. Ours are ours.
The olives
These trees do not belong to a supplier. The oil that arrives with your bread at breakfast came off them.
Bread, salt, oil. In Crete that is already a meal, and it is the first thing most guests eat here.
The avocados
People are usually surprised by this one. Avocados grow well in this part of Crete, and ours are picked a few kilometres from your table.
And the sea does the rest
What the farm does not provide, the water in front of the property does. The fishermen come in around eight in the morning and the crates go straight to the kitchen. Stefanos goes out with a speargun himself and brings back part of what ends up on the menu.
It is why one line on our menu has no price next to it. Beside fresh fish it says ask us, because the answer changes with the boat.
